Hooked on Flavor: Alaskan Halibut Cheeks (seating #2) on Jun 05, 2024 at 6:00PM - La Cuisine

Dive into the rich culinary traditions of the Last Frontier with a cooking class led by Wild Game Chef Rick Matney. Join us to enjoy the delicate flavors of Alaskan halibut cheeks, paired with the soul-warming essence of Étouffée. This class will include opportunities to assist our guest chef and you'll learn the art of preparing tender halibut cheeks, sourced from the pristine waters of Alaska, and transforming them into a delectable étouffée—a classic Cajun and Creole dish known for its robust flavors and comforting textures. Étouffée means "smothered," and it is a common cooking technique in the South.

As an avid hunter and angler for nearly all his life, Chef Rick has honed in on age-old methods of harvesting and preserving and new modern ways of preparing meals. Rick wants to share his knowledge of how to break down, preserve and prepare wild game and fish to make an end product even tastier and more appealing to the senses. Bring your questions and gain expertise from one of Bozeman's best.
