
Chef Luis Valdovinos embraces his Mexican heritage and will create a menu based on authentic Mexican salsa fundamentals. We will make 3 - 4 salsas utilizing different cooking techniques and then create three dishes with them; such as Guacamole, Ceviche and Enchiladas.
Chef Luis, inspired by his upbringing in San Diego and Baja, Mexico, decided to pursue a career in the restaurant business. He combined family recipes and a love for the food from his hometown to launch a successful venture. After a combat deployment and years in corporate sales, he made the leap to open a food truck, eventually expanding to seven Baja Mexican cuisine-based restaurants over 12 years. His most recent venture, Last Call Modern Mexican in downtown Bozeman, unfortunately closed in August. Currently, he's embarking on a new venture called "Corazón," focusing on Mexican cuisine through a personal chef and pop-up restaurant concept. Additionally, Luis has embraced his passion for the outdoors, becoming a certified fly fishing guide and creating unique wild game dishes from the meat he harvests.
