Flaky Delights: A 3-Part Pastry Adventure (Jan 3, 17 AND 31) beginning Jan 03, 2024 at 6:00PM - La Cuisine

Pastry Chef Hope Romeo will lead you through a 3 class series creating the perfect pastries, specifically designed from beginner to proficient. You will learn the art of laminated doughs thanks to hands-on class tasks in addition to sequential weeks to practice at home. Bring successes, questions and even, flops, back to class for follow-up support and instruction. Please be sure to mark your calendar for all 3 (Wednesday night) sessions!

Each class will include complimentary protein rich appetizers.

Week 1: Tart Extravaganza Volunteers to help with different steps of the tart making process. You'll learn the recipes and enjoy a Sable Shell — Pistachio Frangipane with cranberry orange compote and Buckwheat Shortcrust Shell with ricotta, herb filling, and roasted squash

Week 2: Puff Pastry Perfection Learn how to make laminated doughs where volunteers will help with the butter insertion and folds. Each table will include a each table will need a rolling station with plenty of opportunities to perfect your technique. Pastry treats will be made by the participants to include Freeform “Tarts” with wild mushroom and herbed goat cheese, Baked Brie with tasty jam and Apple turnovers.

Week 3: Croissant Craftsmanship We will take it to the next level with laminated doughs and there will be more opportunities to practice butter insertion and laminated folds. Make your own croissants with these “traditional” flavors: Traditional Butter croissant, Almond Croissant and Ham and cheese croissant.

Suggested Wine Pairings: We will have a weekly wine pairing updated shortly
