
Join Cookbook Author and Pastry Chef Stephanie Banyas to learn all about the best ways to cook with Green Chiles!
Chef Stephanie spent twenty-three years as the right hand to chef Bobby Flay helping him create his culinary empire in New York City. She moved to Bozeman in 2021 where she currently is involved in many different aspects of the local culinary scene. Stephanie is also the co-author of "Lemongrass and Lime", a favorite cookbook of ours that you can pick up at the store after class.
Fresh green chiles are a common ingredient in Mexican and Southwest food. Jalapeno and serrano are a ubiquitous ingredient in pico de gallo; poblanos and Anaheim’s are the chile of choice for chile rellenos, and no green chile hamburger in New Mexico would be complete without the earthy and slightly pungent flavor of the Hatch green chile.
But remember that chile peppers don’t just make foods hot or spicy; they also add nuanced layers of flavor to a dish. Stephanie will share some of her favorite green chile recipes and give you a complete 411 on how to buy them, store them, prep them, roast them and cook with them.
