We learned to appreciate moules-frites on travels to the North Sea when living in Germany and Belgium. I have been looking for the perfect time to share this speciality at La Cuisine and Chef Scott Myers is the perfect guy! Chef Scott was previously the Executive Chef at Gallatin River Lodge and is now operating his own private chef business.

If you haven't tried them, mussels are a shellfish, similar to clams and oysters and can even be eaten without a fork. Personally, I like to use the shell of one to be my fork for all the rest. In season between October and March, makes this a perfect time to grab a date and enjoy an early Valentines night out, come on your own, or gather some friends to join. You'll learn the secrets for cleaning and preparing fresh mussels, along with a wonderful recipes.


First: Frisee aux Lardon - Frisee, Burnt Radicchio, Endive, Truffle Sabayon, Cured Yolk, Pork Belly, Mustard Seed
Second: Steamed Prince Edward Island Mussels - Merguez, Flageolet, Roasted Garlic, Rapini, Basil,  Smoked Tomato
Third: Seckle Pear(or Poire William) Tatin - Amalthia Soft Goat Cheese, Maple, Dulce Creme Anglaise, Frangipane Ice Cream


Wine Pairing: 2021 La Spinetta Toscana Vermentino $24.95 Citrus, lemon, apple with a touch of honey. Classic Italian rounded acidity.
