Chef Stephanie spent twenty-three years as the right hand to chef Bobby Flay helping him create his culinary empire in New York City. She moved to Bozeman in 2021 where she currently is involved in many different aspects of the local culinary scene. Stephanie is also the co-author of "Lemongrass and Lime", a favorite cookbook of ours that you can pick up at the store after class.

If most of your experience with chile peppers has been of the raw or ground variety, you’re in for a real treat once you start dabbling with whole dried chiles. Learn everything you need to know about how to buy, store, prep, cook and bake with dried red chiles.

Did you know that dried red chiles generally have different names from their fresh counterparts; smaller ones are usually hotter than larger ones; and darker colors, such as black and purple, typically mean richer dried-fruit flavors, as opposed to the more fiery red-hued specimens. From ancho to chile de arbol and guajillo to chipotle, we got you covered!
