Chef Daniel Cox might be known as the KING of Sous-Vide at La Cuisine. We've had eggs, creme brûlée, meats of all kinds... will we finally find something he can't sous-vide perfectly? Translated from the French, sous vide means ‘under vacuum’ and involves sealing food in a bag before immersing it in a circulating water bath and cooking it slowly at a low, very consistent temperature. For some, it is known as the modern day version of a slow cooker. No matter the description, we can undeniably say it is the easiest way to expertly cook for tenderness, moisture and even cooking.

Chef Daniel will meet your skills, no matter where they are with tonight's dinner:

  • Sous Vide Beets with Pomegranate Pickled Onions and local Goat Cheese (beginner)
  • Sous Cide Chicken Caesar Salad (intermediate)
  • 24-Hr Bison Short Ribs (advanced)
  • Strawberry Cheesecake with Brown Butter Streusel (intermediate)

Wine Pairing will be completed by The Wine Gallery as soon as the menu is complete.
