A Midnight Diner: Japanese Culinary Tour  on Tue, Sep 17, 2024  at 6:00 PM

Tonight's class is Bozeman's version of Midnight Diner (深夜⻝堂, Shinya Shokudō), a Japanese TV series that aired in Japan from 2009 to 2014 and is available on Netflix. The drama focuses on a late-night diner in the Shinjuku district of Tokyo, its mysterious chef known only as "Master," and his customers’ lives. The 12-seat diner is open from midnight to 7 am and has a quirky group of regulars who all have interesting backstories. Tonight's chef is Thomas Lechner, also CEO & owner of Washoku Tours, a luxury travel experience designed for those who want to take a deep dive into Japanese food culture off the over-trodden tourist path.

All three of tonight's dishes are directly inspired by Midnight Diner. Our main dish is the only food item on the master’s set menu: Tonjiru (豚汁) or pork miso soup. The appetizer is a much beloved Japanese staple called Asari no Sakamushi (あさりの酒蒸し), or Japanese Sake-Steamed Clams. And, the third recipe is for Chicken Cheese Katsu (ささみチーズカツ), which can be served as either an appetizer or main dish.
