The Coconut Inn is an imaginary location created for you by Chef Claudia from Colombia's Caribbean Coast. With her background in college, and living in Miami, hub to the Caribbean islands, she used food and recipes as a means to practice community and diversity.

It's early winter at the Coconut Inn but there is an innate desire to keep holding on to warmer weather. These Caribbean-inspired recipes will surely help you keep warm throughout the months to come.

Dinner will include: Caribbean Butternut Squash Bisque with hints of allspice, topped with thick-cut maple bacon, Green Mango Salad with a Citrus Vinaigrette, Cartagena Coconut Rice with Drunken Raisins, 5-C Crusted Pork Tenderloin with a Chile-Guava
