Main Dishes

Okonomiyaki is a Japanese savory pancake garnished with sweet and savory sauces. Its name means "grilled as you like it" (okonomi means "as you like" and yaki means "grill"), reflecting its highly customizable ingredients and toppings.

Ingredients

  • 1 cup cake or all-purpose flour
  • 1 pinch sugar 1 tsp. Mirin
  • 1 tsp mirin
  • ¾ cup water
  • 3 slices thinly-cut brisket (or any meat)
  • 3 oz thinly-sliced cabbage (see Note)
  • ¼ cup chopped green onion
  • 3 oz Asian noodle of choice, diced (e.g. rice noodles)
  • 8 tbsp canola or other neutral oil

To Garnish

  • Ginger mayo (recipe below)
  • Hoisin Sauce (recipe below)

Ginger Kewpie Mayo Sauce

  • ½ cup kewpie mayonnaise (see Note)
  • 1 large tbsp finely diced or pressed ginger
  • ½ lime, squeezed
  • Salt and pepper, to taste

Hoisin Mirin Sauce

  • 3 tbsp hoisin sauce
  • 2 tbsp mirin
  • ½ lemon, squeezed

Directions

  1. First, prep your sauces. For both sauces, simply whisk their respective ingredients together in separate bowls.
  2. To make the pancake, combine the mirin and sugar in the water and then add the flour. Whisk until smooth. Add the cabbage, scallions, noodles and meat to the batter.
  3. The batter should be about the same consistency as crepe batter, thin and pourable.
  4. Add ¼ cup of the mix to a hot pan and swirl around to coat the pan. Cook ~1-2 minutes until the edges of the pancake are slightly brown. Flip. Cook 2 more minutes.
  5. Flip, cooking 2 more minutes. Remove to a plate when nicely browned.
  6. Garnish with the ginger kewpie aioli and the hoisin sauces. Optionally, add more scallions and sesame seeds. Serve immediately.
