It's worth it to source the allspice and fresh thyme for this recipe. Combined with brown sugar and lime juice, it's a powerfully delicious combo.

Broiled Caribbean Mahi-Mahi

Ingredients

  • 4 scallions, minced
  • 1 ½ tbsp chopped fresh thyme

  • 1 tbsp grated lime zest + 2 tbsp lime juice

  • ¼ tsp ground allspice

  • 3 tbsp neutral oil, divided

  • Kosher salt

  • Black pepper

  • 1 tbsp packed brown sugar

  • 4 6-oz Mahi Mahi fillets (about 1” thick), patted dry

Directions

  1. Heat your oven to broil, with a rack 6 inches from the heating element.

  2. Whisk together the scallions, thyme, lime zest/juice, allspice, 1 tbsp of oil, and ½ tsp each salt and pepper; set aside.

  3. On a plate, mix the sugar, 1 tsp salt, ½ tsp pepper, and the remaining 2 tbsp oil; add the fish and turn to coat.

  4. Place the fillets on an oiled, broiler-safe rimmed baking sheet and broil until lightly browned at the edges, about 5 minutes, rotating about halfway through.

  5. Transfer to a platter. Spoon the herb-oil mixture over the fish. Serve.
