Dan Dan noodles are a popular Sichuan Chinese dish known for their spicy, savory, and slightly tangy flavors. The dish typically consists of wheat noodles, minced pork or sometimes beef, and a spicy chili oil sauce. The sauce is usually made with a combination of ingredients such as chili oil, Sichuan peppercorns, garlic, ginger, soy sauce, vinegar, and sometimes sesame paste.
Chef Linda Huang brings you her delicious version of this classic Chinese noodle dish - a perfect addition to your summer menu.
White Round Wheat Noodles
Topping - ยฝ C
Si Chuan Chili Sauce 1โ2 cup
3 Tbsp Cooking Oil
8 oz Ground Pork
โ C. Sui Mi Ya Cai
ยฝ tsp Sichuan Peppercorn Powder
1 tsp Cooking Wine
2 tsp Soy Sauce
1 tsp Oyster Sauce
Toasted Peanut Bits
Green Onion & Cilantro
Romain Heart, Cucumber and Carrots - or any veggies of your choice
Warm up a pan, add oil and ground pork, peppercorn powder, a little 5-spice powder if you have any, stir-fry until pork looks dry and crispy, add sui mi ya cai, soy sauce, cooking wine, oyster sauce, stir fry for couple minutes, set aside.
Boil some water in a pot, add noodles, let it boil until cooked.
Drain the noodles give it a cold-water shower to stop noodles from cooking.
Plate noodles in a bowl. Top with pork, sauce, and veggies. Garnish with peanuts and green onion, and a sprinkle of SiChuan peppercorn powder.
Mix and enjoy!
Tips: Add salt and a little oil to your water, helps noodle come out with a better texture.
*sub chili sauce with sesame sauce for a non-spicy version, or mix the two for more layers of flavor!
