This recipe is specifically for basmati rice; using other varieties might not yield the right result.

2 cups of basmati rice, rinsed until water runs clear
1 tbsp olive oil
4 cups of water
2 tsp of salt
½ cup of dates, pitted and chopped
zest of 1 lemon
¼ cup pine nuts (or almonds), toasted
Cooking Pan
In a lidded, heavy-bottomed pan, heat olive oil to medium-high.
When the oil is hot, add the rinsed rice and salt. Stir to combine and add salt.
Add the water and stir. When the water begins to boil, reduce the heat to medium and allow the water to evaporate.
Cover the rice and cook for 15-20 minutes.
Remove lid and add dates. Stir to combine.
Off the heat, add lemon zest and pine nuts. Stir, serve, and enjoy.
