Hot Roja Salsa

Ingredients

  • 15-20 Roma tomatoes (cut out stem)

  • 2 White onions chopped in 1⁄2 then thickly chopped 3x3

  • 1 cup of Dried Chile de Arbol

  • 14 Cloves of garlic

  • Olive oil

  • Mexican spice mix: 1 Tbs onion powder, 1 Tbs garlic powder, 1 1⁄2 Tbs cumin, 2 Tbs oregano, 1 Tbs black pepper, 1 Tbs thyme, 2 1⁄2 Tbs salt

Directions

  1. Heat the oven to 400 degrees.

  2. Place Roma tomatoes on half sheet pan and lightly coat with olive oil.

  3. Place tomatoes in oven until soft and lightly gold, about 30 minutes.

  4. Heat a pan on medium with some olive oil. Add white onion, garlic, and the chiles. Sauté until onions and garlic are soft.

  5. Put cooked Roma tomatoes, the onion, garlic, chile mixture, and Mexican spice blend into the blender and blend until smooth.

  6. Enjoy!
