This recipe is very simple yet incredibly flavorful. This recipe requires the tomatoes to be seasoned and rested overnight to 'marinate'. The tomatoes are then roasted, yielding a perfectly jammy tomato every time. Once roasted, the tomatoes can be left whole and served as a side, they can also be mashed or blended and be used on toast, pasta, protein or used as a dip!

5.5 quarts Roma Tomatoes
1 ½ tbsp dry oregano
¾ tbsp granulated garlic
¾ tbsp kosher salt
½ tbsp pepper
⅓ cup olive oil
Baking Pan
Cut the tomatoes in half horizontally, then add all ingredients into a large bowl and mix thoroughly.
Cover the tomatoes and let sit overnight. When ready to cook, preheat the oven to 400°F.
Place the marinated tomatoes cut side down on a baking sheet lined with parchment paper. Bake for 25 minutes.
Remove the oven and peel the skins off. Let cool. Serve as-is or mash/blend into a sauce or jam consistency.
