Mushrooms al Ajillo is a common tapas dish served in Spain. It is extremely simple to make, yet full of flavor. These are great on their own, but we recommend serving with a toasted baguette.

Mushrooms al Ajillo

Ingredients

  • 10 large button mushrooms, quartered

  • 5 garlic cloves

  • ¼ cup olive oil

  • 1 tbsp lemon juice

  • 2 tbsp cooking sherry

  • ¼ tsp paprika

  • ½ tsp crushed red pepper flakes

  • 1 tbsp chopped fresh parsley

  • Salt and pepper to taste

Directions

  1. Quarter the mushrooms, chop the parsley, crush the garlic.

  2. Over a medium heat, add the olive oil and sauté the mushrooms for a few minutes.

  3. Next add the remaining ingredients EXCEPT the parsley. Cook for a further 5 minutes, stirring.

  4. Then remove pan from heat, add the chopped parsley and stir through. Serve hot with some crusty bread.
