The rum isn't absolutely necessary, but it does make these plantains absolutely delicious.

Ingredients

  • 2 large ripe plantains (almost black)
  • 4 tbsp neutral oil, like canola
  • 1 cup water
  • 3 tbsp brown sugar
  • 4 tbsp golden rum
  • ¼ tsp salt

Directions

  1. Peel the plantains and cut them into ½-inch diagonal slices.
  2. In a separate container, mix water, sugar, rum, and salt.
  3. Heat the neutral oil in a large 12-inch skillet over medium heat.
  4. Fry, turning the slices until they’re golden brown. Plantains have a high sugar content, so they’ll cook fast.
  5. Once the plantains are fried, remove from the heat and add the rum mixture. Be careful, as it will splatter.
  6. Turn heat to low and continue to cook until the liquid becomes syrupy.
  7. Serve warm.
