Despite the name, using Roma tomatoes is not necessary - just buy the best canned tomatoes you can find.

Roma Tomato Sauce

Ingredients

  • 1 tbsp olive oil

  • 3 cloves garlic, minced
  • 1 small onion, chopped
  • ½ tsp crushed red pepper flakes (optional)

  • 1 28 oz can crushed tomatoes

  • 2 sprigs fresh basil

  • Salt and pepper, to taste

Directions

  1. Heat oil in saucepan.  Add onions and cook for 3-4 minutes until soft.

  2. Add garlic and red pepper flakes if using and cook for another minutes until garlic just becomes fragrant.

  3. Add tomatoes, basil and salt and simmer until the tomatoes have thickened, approximately 20 minutes. 

  4. Adjust salt, if necessary, and add pepper to taste.

  5. Use immediately, or refrigerate until ready to use, up to 1 week.
