This recipe uses Dutch-processed cocoa powder, which is regular cocoa that has been washed with an alkaline solution to neutralize its natural acidity. You can absolutely make this mousse with regular cocoa powder, it'll just taste less mild and more bitter.

Simple Chocolate Mousse

Ingredients

  • 4 oz cream cheese, at room temperature

  • 1 cup heavy cream

  • 1 cup whole milk
  • Unsweetened Dutch-processed cocoa powder

  • Pinch of salt
  • ¼ cup confectioners’ sugar, plus more for whipped cream
  • 2 tsp vanilla extract

Directions

  1. Combine cream and cream cheese in mixer with whisk attachment until soft peaks form. Add milk, cocoa powder, confectioners’ sugar and vanilla and mix until smooth.

  2. Divide among ramekins, cover and refrigerate for at least 1 hour and up to 2 days. 

  3. To serve, top with a dollop of whipped cream, chocolate shavings, and cocoa powder.
