Pine nuts can be expensive, and they're not everyone's favorite. If walnuts or pecans are more accessible, try swapping them out for the pine nuts here. You might find a new favorite!

Basil Pesto

Ingredients

  • 1 cup fresh basil leaves, packed
  • 3 tbsp toasted pine nuts

  • ¼ cup freshly grated Parmesan cheese

  • 1 garlic clove
  • 3 tsp fresh lemon juice

  • ¼ cup + 2 tbsp extra-virgin olive oil

  • Salt and black pepper, to taste

Directions

  1. Combine basil leaves, pine nuts, parmesan, garlic, and lemon juice in a food processor.
  2. Pulse until finely minced, scraping down sides with a spatula.

  3. While the food processor is running, slowly add the olive oil in a small steady stream, scraping down sides with a spatula.

  4. Season with salt and pepper to taste. Use immediately or refrigerate up to 1 week.
