Pine nuts can be expensive, and they're not everyone's favorite. If walnuts or pecans are more accessible, try swapping them out for the pine nuts here. You might find a new favorite!

¼ cup freshly grated Parmesan cheese
3 tsp fresh lemon juice
¼ cup + 2 tbsp extra-virgin olive oil
Pulse until finely minced, scraping down sides with a spatula.
While the food processor is running, slowly add the olive oil in a small steady stream, scraping down sides with a spatula.
