Blacksmith's Butterscotch Budino

Ingredients

    • 1 C Water

    • 1 lb Brown Sugar

    • 3 t Salt

    • 3 C Whole Milk

    • 6 C Heavy Cream

    • 2 Whole Eggs 

    • 6 Egg Yolks

    • 10 T Corn Starch

    • 10 T Butter, room temp 

    • 4 T Dark Rum

    • Powdered Sugar

    • Vanilla Extract

    • Caramel Sauce

    • Whipped Cream ( See ingredient list above )

    Directions

    1. In a very heavy bottomed pot, whisk water & brown sugar to combine, bring to a boil. Reduce a touch.

    2. Add milk in very slowly while whisking. Make sure it’s still maintaining a boil.

    3. Add cream in the same way.
    4. Add a touch of salt / 3 tsp
    5. In a seperate bowl, make a slurry with eggs and corn starch

    6. Whisk quickly into the pot. Bring to a boil.

    7. Add in the rum.

    8. Reduce a touch.  Turn down to a simmer while you make the whipped cream. If the rum makes it too liquidy, bring back to a boil for a couple minutes to re-thicken.
    9. Add butter off the heat to help emulsify.
    10. Pour into individual ramekins or dessert glasses. Let set up at least 6 hours in the fridge.
