Pomegranate molasses is pomegranate juice that's been reduced until thick and glossy. It's a powerful condiment and worth a spot in your pantry. Traditionally, it's not used in Greek salad, but it's certainly an interesting addition!

Greek Salad

Ingredients

  • ½ red onion

  • 8 Persian cucumbers

  • 2 cups cherry tomatoes

  • 1 red bell pepper

  • 150g or 5 oz feta cheese, crumbled

  • 1 bunch mint leaves

  • Juice of 2 lemons

  • 1 tbsp pomegranate molasses

  • Olive oil, to taste

Directions

  1. Finely slice the onion and soak in water while prepping the rest of the ingredients.

  2. Chop all the veggies into bigger chunks so there’s texture.

  3. Toss to combine with cheese, mint, lemons, and pomegranate molasses. Taste and season with more oil, salt, or citrus.

  4. Serve immediately, or let sit in the fridge before eating.
