Perhaps the most commonly known Spanish dish are Patatas Bravas, a delicious potato dish served as an appetizer or tapas (as they're called in Spanish). Enjoy these on their own as an accompaniment to your favorite Spanish-inspired entrée.

Patatas Bravas

Ingredients

    • 4 ½ tsp olive oil

    • 1 small onion, minced

    • 3 garlic cloves, chopped

    • 1 tsp smoked paprika

    • ½ tsp ground cumin

    • ¼ tsp cayenne, ground Aleppo or ½ tsp crushed red pepper flakes

    • One 28 oz can peeled plum tomatoes, chopped, with their liquids

    • Kosher salt to taste

    • 16 small red-skinned potatoes (about 1.5 pounds)

    • 3-4 tbsp olive oil

    • Kosher salt to taste

      1. Heat the oil in a medium size saucepan over medium heat.

      2. Add the onion and garlic and cook until translucent, making sure not to brown.

      3. Add the smoked paprika, cumin, and pepper, and stir for a few seconds.

      4. Add the tomatoes and their liquid and ½ cup of water. Bring to a simmer.

      5. Cover and lower the heat until the tomatoes have cooked down to a puree. Add more water if it is too thick.

      6. If you like it velvety, allow it to cool off, and blend in a blender. Otherwise, if you like it chunky like we do, use it as is.

      7. Season with salt and spice it up more with your favorite hot sauce. A chipotle flavored one will add more smokiness to the flavor.

      1. Place the potatoes in a large saucepan, add cold water and cover by 2 inches.

      2. Bring to a boil over medium-high heat, partially covered until they are tender, about 15 minutes.

      3. Drain and allow to cool off. If your potatoes are too large, halve them.

      4. Add olive oil to the pan and sauté the potatoes, until they crispy on all sides, or to your liking.

      5. Sprinkle more Kosher salt and serve accompanied by the spicy tomato sauce and good quality olives.
