This rendition of Marcella Hazan's classic marinara is a great recipe for adding to your favorite pasta or pizza or using as a dip for bread! This marinara is rich in flavor and will taste just like Nonna's.

Marcella Hazan's Marinara

Ingredients

    • One 28 oz can of imported Italian tomatoes, cut up with their juice (San Marzano works well)

    • 1 stick of butter

    • 1 medium onion, pealed and cut in half

    • Salt to taste, or 1 tsp of fish sauce

    • Saucepan

    Directions

    1. Place the canned San Marzano tomatoes in a saucepan. Mash the tomatoes with your hand, or a spoon.

    2. Add butter, onion, and salt/fish sauce, and cook uncovered at a slow, but steady simmer for 30-45 minutes, or until thicken to your liking.

    3. Stir from time to time, mashing any of the tomato pieces with the back of a wooden spoon.

    4. Taste and correct salt or add fish sauce.

    5. You may remove the onion, as Hazan recommends, or process it and add to the sauce.
