If you've heard of "green sauce", that'll be green chilies at work. Enchiladas are usually done red or green. These are the latter.

2 cups green chile sauce
1 tsp cumin
1 tsp chili powder
1 tsp Mexican oregano
1 tsp apple cider vinegar
Salt, to taste
Tortillas (your choice)
4 cups shredded chicken
2 cups Mexican blend shredded cheese
To make the sauce, mix all ingredients together in a small saucepan and gently warm. Taste to make sure the flavor is balanced.
Spoon a thin layer of the sauce on the bottom of your baking dish.
Gather your tortillas and prepare to roll: add a layer of chicken, sprinkle with cheese, and place the roll into your baking dish. It helps if you microwave the tortillas right before, to soften.
Nest the rolls tightly beside each other. Pour the rest of the sauce over top and sprinkle with the rest of the cheese.
Bake, covered in foil at 400°F for 20-30 minutes. Enjoy!
