Dive into a flavorful journey of healthy eating in a cooking class focused on anti-inflammatory foods at La Cuisine! Discover how inflammation affects your body and learn how to combat it with nutrient-dense, whole foods. 

In this class led by Michelle Smith, chef and functional nutritionist, you'll explore a menu crafted to soothe and energize, featuring gluten-free and dairy-free dishes designed to support your well-being.

We'll start with crispy GF Nut Crackers and Rice Crackers paired with vibrant Sassy Sun-dried Tomato Dip (contain cashews) and a creamy Avocado Dip.

Next, enjoy a refreshing Tangy Napa Cabbage Slaw with a zesty Apple Cider Vinaigrette before savoring a hearty Caribbean Chicken dish with black beans, veggies, and basmati rice.

Finish on a sweet note with a Coconut Chia Parfait topped with fresh berries and pistachios.

Michelle has undergrad degrees in Botany and English Literature and working in many restaurants, she headed off to Le Cordon Bleu in the northwest to officially mark the beginning of becoming a chef. From there, she acquired a job in the Oregon wine industry steering her to travel abroad for many years learning foods and cooking techniques of the world. She found chef work in eclectic locations and settings including private homes, cattle ranches, yachts, cruise ships and numerous ethnic restaurants.  

Today, her personal interest in cooking for longevity and health focusing on whole foods and holistic lifestyle led her specifically into functional nutrition. Upon gaining her certification in functional nutrition, she now teaches approachable, home-style fusion cooking classes that showcase the health benefits of the ingredients being used.  She shares openly her 30 years of knowledge and experience in the kitchen that she calls her Michi-Ts. Michi-Ts are Tips, Tricks, Tools, and Techniques that make the kitchen and food world easier for all. Her mantra is to build health and manifest healing through whole food to improve quality of life.
