Tina, owner of La Cuisine and our very own Mountain Maven uses simple and traditional ingredients such as soft lasagna noodles and flavorful ground beef in her lasagna. Non-traditionally, she adds a unique mixture of gooey cheeses. Since few things match the delightful scent of a lasagna simmering in the oven, let's roll up our sleeves and get cooking!

One of the most incredible things about this lasagna recipe is its adaptability! You can err on the side of tradition with an all-beef filling or even develop a richer flavor by adding some sausage. Should you choose to incorporate fresh herbs and spices, you will add a pop of brightness and increase nutrition. Or, you can choose to double your batch to freeze for future suppers. So, gather your ingredients, put on your apron, and whip up a satisfying and plentiful meal, perfect for feeding the entire family now and in the near future!

Lasagna

Ingredients

  • 6 lasagna noodles

  • 2 tbsp garlic powder

  • 1/2 sweet onion, chopped

  • 2 tbsp caramelized garlic olive oil

  • 2 tsp salt

  • 1/4 tsp pepper

  • 1/2 tsp basil

  • 1 tbsp minced parsley

  • 2 cups mozzarella cheese, shredded

  • 2 cups cheddar (or colby/cheddar mix) cheese, shredded

  • 1 1/2 lb ground beef (or half beef, half bulk sausage)

  • 2 cups hot water

  • 2-6 oz cans tomato paste

  • 2 eggs, beaten

  • 1 pint cottage cheese

Directions

  1. Cook noodles in boiling water, salted and a 1 tbsp olive oil, for 15 minutes. Option: use the oven ready noodles, especially when opting to freeze.

  2. Cook onion in 2 tbsp caramelized garlic olive oil. Add ground beef and spices. Cook until crumbly and then drain.

  3. Add tomato paste and hot water to ground beef mixture. Simmer 5 minutes.

  4. Blend eggs with cottage cheese. Set aside.

  5. In a 9×13 baking dish, put (1) a thin layer of meat sauce, (2) half the noodles, (3) all of the cottage cheese mixture, (4) half of the cheeses, (5) repeat with 1/2 of the remaining meat sauce, (6) rest of the noodles, (7) meat sauce, and finally (8) top with cheeses.

  6. Bake at 350° for 30-40 minutes. Let rest 5 minutes before serving.
