This recipe for Cornish game hens will become your new go-to for a hearty entrée! Cooked with a buttery, herbaceous seasoning these little birds pack a big punch! This recipe can be made in the oven or on the grill. 

Spatchcock Cornish Hens

Ingredients

    • Meat Thermometer

    • Poultry Shears

    • Basting Brush

    • 2 Cornish hens, thawed and pat dry

    • ½ cup butter, melted

    • 1 TBSP garlic, minced

    • 1 TBSP Garlic and Herb Seasoning

    Directions

    1. Spatchcock the hen: Remove the backbone from the cornish hen and lie it flat (see the YouTube link at bottom for demonstration)*

    2. In a saucepan, melt the butter. Add the Garlic and Herb seasoning and minced garlic to the butter and mix.

    3. With a basting brush, bast each of the Cornish Hens completely.

    1. Preheat your grill on medium-high heat (about 375 degrees Fahrenheit)

    2. Place the hen flat and back side side down first on the grill and cook for 15 minutes baste and repeat after another 15 min.

    3. Flip the hen to breast side down and baste, cooking for another 15 min.

    4. Continue to cook breast side down and baste until the inside temp is 165-170 and that the skin is golden brown and crispy

    5. Remove each of the thighs, and slice the breasts to serve.

    1. Preheat the oven to 375 degrees Fahrenheit

    2. Place the hens on a baking sheet breast side up. Baste with the butter, herb and garlic mixture.

    3. Baste every 15 min. until the inside temp is 165-170 and the top is golden brown, approx. 40 min.

    4. Remove each of the thighs, and slice the breasts to serve.
