Distinguished Backcountry Dining Chef Scott Myers is partnering with Tangen Draw, a Sustainable Grass Fed Beef & Bison Ranch in Big Timber for his next Montana inspired cooking class at La Cuisine. If you've never seen Chef Scott in action, then you've missed an artist at work. Scott is a true 5 star chef and Tangen Draw delivers a succulent piece of meat every time. It's always a pleasure to work with them both and we know you will agree.

Tonight's Menu: 

First Course: Bison - Liver mousse, Armagnac, baby pickles, wild raspberry, farm honey, gougers 

Second Course:  Beef - carpaccio, smoke, Jerusalem artichoke, ginger, baby onion, pickled radish, sudachi

Third Course: Bison - tenderloin, Douglas Fir, caramelized yam, tiny roots, chokecherry ferment, black garlic, basil

Dessert: Green strawberry, rhubarb conserve, pear cheong, roasted cashew, Neufchâtel, bourbon vanilla.  

Suggested Wine Pairings

Red: Route Stock Cabernet Sauvignon 2022 $26.00
The aroma is cedar, cola, dark black fruit and just a kiss of oak. The pallet is round, expansive, bright and complex with flavors of cocoa, coffee, fruit and herbs. The wine fills the mouth but isn't dominated by any one element and finishing amazingly bright for Cabernet Sauvignon.
White: Raptor Ridge Willamette Valley Pinot Gris 2022 $20.00
This extended lees contact Pinot Gris possesses an alluring aromatic combination of fresh rose petals, white peaches and lemon drop hard candies. With enough acidity to light a tiny house, this perky wine's musk melon and blood orange Bellini flavors are quite refreshing.
