Chef Allison Fasano, Chef/Owner of Brigade and est. 1864 Noir Bar, is teaming up with Wickens Ranch to showcase the incredible flavor of Montana-raised beef. Known for their commitment to regenerative ranching practices, Wickens Ranch produces beef that’s as sustainable as it is delicious. Join us for an evening where Chef Allison will craft a variety of mouthwatering beef dishes while Wickens Ranch will be sharing their story behind what makes their beef truly exceptional!

Menu:

  • Beef Tartare - Miso, Ginger, Shisho and Pickles 
  • Braised Osso Bucco with Fusilli, Tomato Sugo and Fresno Gremolata 
  • Braised Short Ribs with Cacio e Pepe Polenta
