¼ C Breadcrumbs

1 tbsp Garlic Powder

1 Tbsp Kosher Salt

1 Shallot, minced

1 lb Bacon, chopped

1 Yellow Onion, diced

5 Cloves Garlic, minced

1 tsp Red Pepper Flakes

½ C Brown Sugar

1 Jar (8oz) Tart Cherry Juice (concentrated)

½ C Water
-
1 C Dried Tart Cherries, unsweetened

1 Sprig Rosemary

Directions
Pub Burger
Mix all ingredients well in a large bowl.
Portion into 8 oz patties, shaping as you go.
Sear on both sides and finish in the oven at 400° F until 130 -135 (medium)
Tart Cherry Bacon Jam
Chop bacon and cook in a pan until crispy. Remove bacon and the fat.
In 2 tablespoons of bacon fat, sauté chopped onion, garlic and pepper flakes for about 5 minutes.
Deglaze pan with cherry juice and water. Add remaining ingredients and bring the bacon back into the pan.
Simmer covered on low for 2 hours. Most liquid will be gone. Remove bay leaves and rosemary. Fully cool.
Recipe Note
Prepare burgers with toppings of your choice, and top with the tart cherry bacon jam. Brioche buns make for an excellent bread choice!
