Pub Burgers w/ Tart Cherry Bacon Jam

Ingredients

    • 1 lb Ground Beef

    • 1 Egg

    • ¼ C Breadcrumbs

    • 1 tbsp Garlic Powder 

    • 1 Tbsp Onion Powder 

    • 1 Tbsp Kosher Salt

    • 1 Shallot, minced

    • 1 lb Bacon, chopped

    • 1 Yellow Onion, diced

    • 5 Cloves Garlic, minced

    • 1 tsp Red Pepper Flakes

    • ½ C Brown Sugar

    • 1 Jar (8oz) Tart Cherry Juice (concentrated)

    • ½ C Water

    • 1 C Dried Tart Cherries, unsweetened 

    • 1 Sprig Rosemary

    • 5 Bay Leaves

    Directions

      1. Mix all ingredients well in a large bowl.

      2. Portion into 8 oz patties, shaping as you go.

      3. Sear on both sides and finish in the oven at 400° F until 130 -135 (medium)

      1. Chop bacon and cook in a pan until crispy. Remove bacon and the fat.

      2. In 2 tablespoons of bacon fat, sauté chopped onion, garlic and pepper flakes for about 5 minutes.

      3. Deglaze pan with cherry juice and water. Add remaining ingredients and bring the bacon back into the pan.

      4. Simmer covered on low for 2 hours. Most liquid will be gone. Remove bay leaves and rosemary. Fully cool.
