Grass to Plate: Unveiling the Benefits of Regenerative Beef on May 14, 2024 at 6:00PM - La Cuisine

Join Star Mountain Kitchen and Wicken’s Ranch in a collaborative cooking class highlighting ancestral cooking and regenerative ranching. Aaron & Sarah from Star Mountain Kitchen will share why honoring the whole animal and embracing an ancestral diet are essential for supporting optimal health and well-being. Through hands-on cooking demonstrations and tastings, learn to nourish your body with nutrient-dense foods while drawing upon the wisdom of our ancestors' diets.

Danielle Davis, community engagement lead for Wickens Beef, will share more about Eric Wickens' model of production, including stewardship and regenerative practices, approach to finishing cattle, and local community focus. In this hands-on class, we will cover basic butchery to give you an edge in selecting lesser-known cuts of beef that are hidden gems typically only available directly from the rancher or in whole-animal butcher shops. We will also share special tips & tricks plus how to prepare sauces and dressings that elevate any meal and give you the foundation to create wholesome & delicious meals that will wow your guests.

The Menu:
Cider-Braised Beef Flanken Ribs and apple sauce
Bavette Steak Salad: local spring greens, radish, pickled red onion, pea shoots, with maple-dijon salad dressing
Juniper Crusted Picanha Steak and papas fritas with chimichurri
Chocolate Torte with Five Drops Bourbon Caramel Sauce: featuring a surprise ingredient

Suggested Wine Pairing:

  • White- Chardonnay, La Colline Aux Fossiles, Cotes Catalanes, France 2021
  • Red- Cabernet Sauvignon, RouteStock, Napa Valley, California 2022
